Nutritional Guidelines

Everyone knows about the Food Pyramid, but did you know it varies by a
person's age and special needs. There are separate recommendations for
Toddlers, Preschooler and School-age children. Did you know there is
also a separate Food Pyramid for vegetarians?
Did you know that nutrition can affect many things besides health? It
can also affect:

levels
2.
Development
3.
Behavior
4. Rate of
healing

Well-nourished children are more alert, attentive and better able to
benefit from physical activity and learning experiences. Poorly
nourished children may be quiet and withdrawn, or hyperactive and
disruptive. Children who are overweight also face many social,
emotional, and physical problems. They are often slow and less able to
participate in physical activity. They may also suffer ridicule,
emotional stress and be excluded from their peer group. |

Recipes
| Tunas Salad Sandwich |
Ingredients
13 ounces tuna 1/4 c mayonnaise 1/2 c onion, chopped 1/2 c
celery, chopped 1 tablespoon Dijon mustard 1/4 c olives, chopped
lettuce, tomato

Directions
Combine tuna, mayonnaise, Dijon mustard,
onion, celery and olives if using. Fill buns with tuna salad, tomato and
lettuce

Blueberry Pancakes |
|
Ingredients
2 c flower 2 eggs, beaten 2 c milk 2 tbsp sugar 2 tbsp
baking powder 1/2 tsp salt 1 tbsp melted butter 1/4 tsp freshly
grated nutmeg blueberries |
Directions
In a large bowl, add flower, eggs, milk, sugar, baking powder and
salt; blend well. Add nutmeg and melted butter and blend. Pour batter
onto a hot greased griddle and drop blueberries onto each pancake before
turning. Serve with butter and your favorite topping.
